Cajun-style Grilled Chicken
Ingredients:
- 4 chicken breasts, skinless, boneless (4-5 oz or 115 grams each)
- 1 tsp (5 ml) cayenne pepper
- 1 tsp (5 ml) paprika
- 1 tsp (5 ml) salt
- 1/2 tsp (2.5 ml) black pepper
- 1/2 tsp (2.5 ml) white pepper
- 1/2 tsp (2.5 ml) garlic powder
- 1/2 tsp (2.5 ml) onion powder
- 1/2 tsp (2.5 ml) oregano
- 1/2 c (120 ml) lemon juice
- 1/4 c (60 ml) canola oil
Combine all dry spices in a small bowl. Place lemon juice and oil in a shallow glass dish (large enough to hold chicken in a single layer). Add half of spice mixture to oil and lemon juice. Stir to combine. Add chicken breasts, turning to coat both sides. Marinate 30-60 minutes at room temperature or overnight in the refrigerator, covered. Drain chicken from marinade and sprinkle both sides with remaining spice mixture. Grill chicken over hot coals, turning once, approximately 3-8 minutes per side depending on heat intensity and thickness of breasts.
