Black Beans & Rice
Ingredients
- 1 can (15oz.) (425g) black beans, rinsed & drained
- 1 medium onion, chopped
- 11/2 Tbsp (22 ml )olive oil
- 11/2 c (360 ml) brown rice
- 2 red peppers, chopped
- 3 c. (720 ml) low-sodium chicken broth
- 1 1/2 tsp (8 ml) cumin
- fresh cilantro, chopped
In large sauté pan, brown onions in olive oil. Add chopped red peppers and continue to cook for additional 3 minutes. Add 3 cups (720 ml) of low-sodium chicken broth, cumin and cook for a few minutes. Add brown rice and let rice cook for approx 20 minutes (until all liquid is absorbed). Add the beans and fresh cilantro.
Yield: Apprx. 8 servings; 211 calories, (884 kilojoules), 3.7 g fat; 23 carbs per serving.
Serving Size= 1/2 cup (120 ml)
