Healthy Oven-"fried" Chicken
INGREDIENTS
1/4 cup fat-free mayonnaise
1/4 tsp minced garlic
1 cup multigrain cracker crumbs
1 Tbsp Dijon mustard
1/4 tsp Mrs. Dash® Salt-free blend
1/4 cup fat-free Parmesan cheese, grated
1 tsp parsley flakes, dried
1/4 tsp black pepper, ground
4 skinless chicken breasts, sliced in strips
METHOD
In a medium bowl, stir together fat-free mayonnaise, mustard, parsley flakes, garlic, Mrs Dash Salt-free blend and pepper.
Combine cracker crumbs and fat-free Parmesan cheese in a separate shallow bowl. Brush chicken pieces evenly with mayonnaise mixture.
Roll chicken pieces in cracker crumb mixture until coated. Place chicken on a foiled baking sheet. Bake at 400 degrees for approximately
15-20 minutes or until golden and chicken is done.

4 servings; 180 cals; 5.5 g fat; 3 g carbs per serving.
